Coriander and Lime Chicken

Make 3 or 4 deep cuts in the surface of the chicken breasts.
Mix the Philly, lime zest and juice, garlic and coriander in a large bowl. Add the chicken and coat well.
Cook under a medium hot grill for 12 - 15 minutes, turning once until the juices of the chicken run clear when tested with a skewer.
Serve with salad, mixed peppers and a wedge of lime, if liked.
- 4 boneless, skinless chicken breasts
- 100 g Philadelphia Light
- limes, zest & juice
- 2 cloves garlic, crushed
- 3 tbsp fresh coriander, chopped
- mixed salad leaves
- 2 peppers, sliced
