Ingredients

  • 500 g small new potatoes
  • 1 tbsp olive oil
  • 150 g Philadelphia with Chives
  • 2 spring onions, trimmed and finely sliced
  • 75 g mixed salad leaves
  • Cracked black pepper

Instructions

  • Heat oven to 190 ˚C, Gas mark 5. Prick the potatoes and rub with the oil. Place on a baking sheet and bake for 45-50 mins or until cooked.
  • Meanwhile, mix the Philadelphia and spring onion pieces together.
  • When the potatoes are cooked cut a slit along the top of each one and add a teaspoonful of the Philadelphia mixture. Arrange on serving plates with the salad leaves and garnish with some black pepper. Serve immediately.
