Philadelphia Basil Stuffed Chicken
Pre-heat the oven to 200 ⁰C, gas mark 6. Mix together the Philadelphia and shredded basil.
Place the chicken on a chopping board breast side down. Open out the fillet and spread a quarter of the Philadelphia over each chicken breast. Fold the fillet back over and wrap each with 3 pancetta slices.
Pop into a non-stick baking dish and roast in the oven for 25-30 minutes or until the pancetta is golden and the chicken cooked through.
Serve simply with fresh seasonal vegetables.
Smoked streaky bacon can be used instead of pancetta.
