Amaretti Apricot Fool

  • 200 g Philadelphia Light
  • 150 ml Greek yogurt
  • 2 tbsp honey
  • 80 g amaretti biscuits
  • 227 g tin apricot halves, drained and pureed


  • Mix together the Philadelphia, yogurt and honey. Lightly crush the amaretti biscuits.
  • Layer the Philadelphia mixture, apricot puree and amaretti pieces in dessert glasses.


  • This recipe also works beautifully with peaches in place of the apricots.
