Mini Oreo Cheesecake
Preheat oven to 180oC, Gas Mark 4. Beat Philadelphia and sugar in a large bowl until well blended. Add eggs, one at a time, stirring after each addition just until blended.
Place 1 cookie in botttom of each 12 paper cake cases in a bun tin. Fill evenly with batter.
Bake 18-20 minutes or until centres are almost set. Cool. Refrigerate 3 hours or overnight for best results. Drizzle with melted chocolate before serving.
For a healthier topping serve with slices of fresh fruit e.g. strawberries or peaches, instead of melted chocolate.
