Philadelphia Berry Meringues

  • 100 g Philadelphia Lightest
  • 1 tbsp icing sugar, sieved
  • 0.5 tsp kirsch or cherry brandy
  • 4 ready made meringue nests
  • 50 g fresh blueberries
  • 75 g fresh raspberries
  • 4 mint leaves (optional)


  • Mix together the Philadelphia, icing sugar and kirsch until smooth.
  • Spoon the Philadelphia mixture into the meringue nests and top with the fresh berries.
  • Garnish with the mint leaves and serve immediately.


  • The Philadelphia mixture can be made and left covered in the fridge for a few hours if not serving straight away. Fill the meringues just before serving.
  • The alcohol can be replaced with fresh fruit juice instead.
