Tomato and Philadelphia Bruschetta

  • 6 tomatoes, chopped and seeds discarded
  • half a small onion, finely sliced
  • 2 tsp olive oil
  • 1 tsp vinegar
  • 2 slices bread
  • 60 g Philadelphia with Chives
  • mixed salad leaves to serve


  • Stir together the chopped tomatoes and sliced onion with a dash of olive oil and vinegar.
  • Toast the bread. Cut in half and spread with Philadelphia.
  • Top with the fresh tomato salsa and serve with a green salad.


  • Alternatively, use Philadelphia Light and stir some torn basil leaves into the salsa.
  • Try using red onion or chopped spring onion in this recipe.
