Heat oven to 190 ˚C, Gas mark 5. Prick the potatoes and rub with the oil. Place on a baking sheet and bake for 45-50 mins or until cooked.
Meanwhile, mix the Philly and spring onion pieces together.
When the potatoes are cooked cut a slit along the top of each one and add a teaspoonful of the Philly mixture. Arrange on serving plates with the salad leaves and garnish with some black pepper. Serve immediately.
